Cook and pastry chef are his basic training and after a long career in the hotel industry, he became a brewer. The experience and knowledge of this profession were acquired during skills exchanges over several years in an artisanal microbrewery in Switzerland and he then deepened his technical knowledge by completing a university brewer's diploma in France.
